Chocolate Valentines Day Cupcakes

VALENTINES DAY is nearly here and what better way to celebrate than with some deliciously light chocolate cupcakes! I don’t think you can really go wrong with a classic chocolate cupcake, whenever I’m baking for a special occasion my go to recipes are always the classics.

These cupcakes with the cream cheese frosting are the ultimate chocolate indulgence and perfect for that extra special valentines day treat. I always find that cupcakes look even more appetising when decorated, so I’ve sprinkled some hearts and glitter on them but you can use anything to make them look super CUTE!

Ingredients

100g unsalted butter

200g caster sugar

2 medium eggs

25g cocoa powder

1 tsp vanilla extract

140ml natural yogurt

200g self raising flour

1tsp bicarbonate of soda

1tsp white wine vinegar

Frosting –

200g cream cheese

150g unsalted butter

150g icing sugar

1tsp vanilla extract

Recipe

1 – Preheat the oven to 200C and line a cupcake tray with cases.

2 – Cream the butter and sugar together until light and fluffy. Add in the eggs, cocoa powder, vanilla and yogurt. Beat until combined.

3 –  Fold in the flour and bicarbonate of soda until incorporated. Mix in the vinegar and stir well.

4 – Fill the cases 3/4 full and bake in the preheated oven for 12 – 15 minutes or until they spring back when touched.

5 – To make the frosting beat together the cream cheese and butter until creamy and then add the icing sugar.

Top tip: be careful not to choose a cream cheese with a high water content as this will affect the consistency of the frosting. Also, try not to over beat the mix as this can make it too runny to frost.

6 – Once the cupcakes have cooled pipe or spread the frosting on top and decorate with hearts, glitter or leave them as they are.
