Rolo Cookies: Soft, chewy chocolate Rolo cookies ❤

  
I LOVE cookies – they’re just so moorish and super tasty that one cookie is never enough! If I’m having a sweet craving I turn to cookies – I throw whatever I have in the cupboard into the basic mix and after less than 10 minutes in the oven I’m enjoying my freshly baked cookies! ❤

  
Rolos are just so good as well, caramel encased in chocolate – what is not to love?! They’re great in cookies too, making the cookies extra gooey and chewy with the addition of caramel! YUM! 

  
I’ve used the same basic cookie dough recipe as for all of my cookie posts, as I use half light brown sugar and half caster sugar it really adds to the caramel flavour of the whole cookie. You will need to be careful when baking the cookies as the caramel did try to spread from within the cookie …. shocking I know! If you position the Rolo pieces towards the centre it will all be super! 😀

  
So, if you need a sweet pick me up after the loss of the Great British Bake Off – or if you just want to indulge in a few delicious cookies I would definitely recommend giving this a go! The batch makes plenty of cookies so you’ll have a lot of cookie love to spread to friends and family ❤️ 

The important question is, who will get your last Rolo cookie?! 

Ingredients

150g unsalted butter

115g caster sugar

115g soft brown sugar

1 medium egg

1tsp baking powder

1tsp vanilla extract

225g self raising flour

2 tubes of Rolos – chopped into quarters 

Recipe 

Preheat the oven to 180C and line 2 baking trays.

1 – Cream the butter and sugars together until soft and fluffy looking.

2 – Add the egg, vanilla, baking powder and 1 tbsp of the flour – mix well until combined.
3 – Add in the remaining flour and mix until comes together – it will start to form a dough. Once all incorporated add in the Rolo pieces and mix so they’re evenly distributed. 
4 – I used an ice cream scoop to make the dough balls but you can use your hands – it is more fun! I filled the scoop half way and then rolled them into balls – what size they are depends on how big you like your cookies – get creative! They will spread so space them out a bit. Place them on a baking sheet and bake for 8 minutes for a soft bake. An extra 5 minutes for a crispier cookies. 

5 – Leave the cookies to cool a little before moving into a cooling rack and then enjoy your creations! ❤️
