Mini Pizza – a deep base with a delicious tomato, cheese and chicken topping.
I’m not sure I’ve expressed my absolute love of pizza before, but you know when someone asks what’s your favourite food or what food would you take to a deserted island… no hesitation it’s PIZZA! Of course cake and cookies are in a totally different category so I’d them as well!!
You can put anything on a pizza as well so they are super versatile – vegetables, meat, just cheese… lots of cheese … anything!! These pizzas are made with a standard pizza dough and then you can let your pizza craving go wild with the toppings.
I do like a thicker base on my pizza but if you prefer a crispier one just roll out the dough thinner and you’ll have your perfect pizza every time – and as they’re mini pizza and deliciously cute they taste soooo good! I took these along to a party and they didn’t last long, pizza is always a big hit with everyone – especially with me ❤
If you prefer you can just make one large pizza with the dough, you’ll just need to increase the baking time to around 20 minutes depending on how thick you have your base.
500g strong white bread flour
7g fast action yeast
325ml warm water
1 tube of tomato puree
200g cheddar cheese
100g cooked chicken (optional)
1 – Place the flour in a large bowl, add the yeast to one side and the salt to the other. Gradually add in the water, you may not need it all. You’re looking for the dough to come together but not be so sticky you can’t handle it. Knead the dough for 10 minutes, until when you press your thumb in the dough it starts to spring back. Place back into a lightly oiled bowl and allow to rise for 1 hour.
2 – Separate the dough into 24 balls and roll out into circle. Now you can top with anything you like. I used 1tsp of tomato puree on each pizza, a sprinkle of mixed herbs and topped with grated cheese and/or cooked chicken. Bake for 12- 15 minutes or until golden brown.
