Malteser Rocky Road – Chocolate, marshmallows, Maltesers and MORE chocolate!! YUM!
Hello! I feel like I’m saying hello after a very long time, maybe because I am. Once again university deadlines overtook my life, stole my sleep and completely imbalanced my cake and baked goods intake – I mean, how dare it?! So, my first post back after not being able to bake is … a NO- Bake Rocky Road, it makes total sense, right?
If you think about it you really can’t go wrong when chocolate is involved, and this recipe has lots and lots and lots of chocolate. A rocky road is basically melted chocolate with whatever you fancy thrown in – with some added sugar and butter to make it super moorish! I LOVE Maltesers as well, so it was a no brainier for me! Does anyone remember when you could buy those BIG tubs of maltesers, I loved those, they were great. *thinks about hundreds and hundreds of Maltesers* ❤️❤️
Anyhow, bake to what’s important, this recipe, so you can too have Malteser Rocky Road to snack, eat or devour just in time for the weekend! When I was making these scrummy rocky road squares they came out more like huuuuge chunks so I went with it – the more chocolate the better in my book! You can spread the mix out into a larger tin or into two tins if you’d like them thinner – each to their own!
This might just be my favourite rocky road recipe – the chocolate melts in your mouth, then you find some marshmallows and then, then you get the crunch of the Maltesers – I was in total chocolate HEAVEN!!
I loved making these Malteser Rocky Road Chunks, I hope you do too.
400g milk chocolate
125g golden syrup
125g unsalted butter
125g mini marshmallows
420g Maltesers (2 large packs)
150g milk chocolate
Grease and line a 9 inch square baking tin.
1 – Melt the chocolate, golden syrup and butter in a double boiler. Keep stirring until smooth and combined.
2 – Take the chocolate mix off the heat and fold through the marshmallows and Maltesers. Pour into the tin and refrigerate for 2 hours.
3 – Melt the remaining chocolate, and ensuring that the rocky road is completely set first, pour over the melted chocolate on top. Spread over the whole of the rocky road, and sprinkle with chocolate balls or strands.
