Mint Aero Chocolate Brownies – Chocolate and peppermint flavoured brownies, topped with bite size Mint Aero pieces ❤
BROWNIES were made for Friday’s – a delicious chocolate indulgence to celebrate the beginning of the weekend! I always look at the ingredients to make brownies and think, yes, this amount of chocolate is going to make for an epically good brownie. The addition of peppermint extract to the brownie mix really adds a whole new dimension, a whole new brownie experience some might say. It brings a freshness to the bake and cuts through the super chocolatey base so well that the second brownie goes down even better than the first. Trust me on this.
I think I’ve always liked the chocolate and mint combo, one of my favourite chocolate indulgences are After Eight mint thins – YUMMM! At Christmas time I can 100% justify eating a whole box of these whilst winning a casual game of Monopoly. Seen as this isn’t as acceptable during the summer months (Whyyy?!) I decided the next best thing to indulge in would be these scrummy Mint Aero brownies. Mint Aero’s are awesome, fact. Possibly even better than the original Aero, in my opinion anyway. What I do know though is that Mint Aero Chocolate Brownies are mouth-wateringly good, fact.
Fudgy brownies are the best. Fudgy brownies with Mint Aero are better. Fudgy brownies with Mint Aero that are easy to make? Surely a winner for your next baking adventure? I think so 😉

I hope you all have a lovely weekend. I’ll be ‘hard at work’ doing some baking research for the coming weeks as WordPress has informed me my last post was 24 days ago and I simply cannot go this long again without baking! Until the next times baking friends – ENJOY!
275g plain chocolate
275g unsalted butter
325g caster sugar
4 medium eggs
1 1/2tsp peppermint extract
125g plain flour
50g cocoa powder
1tsp baking powder
1/2 bag of Mint Aero Mini’s (you can eat the other half!)
1 – Preheat the oven to 170C and line 2 baking tins.
2 – Melt the chocolate and butter together. Either in the microwave in short 30 second blasts or in a bowl over a pan of boiling water.
3 – In a separate bowl whisk the sugar, eggs and peppermint extract until just frothy.
4 – Pour the egg mixture into the chocolate mix and stir well.
5 – Sieve the flour, cocoa and baking powder into the chocolate mix and stir until just combined.
6 – Pour into the trays until half full, depending on how thick you like your brownies.
7 – Bake for 25 – 30 minutes – when the brownies start to show cracks on top check them as they’re probably ready to come out. Allow to cool completely.
8 – Cut into desired portions and place a Mint Aero Mini on top for added minted goodness.
